Wicked Wednesday - Lemon Muffins!
This Wednesday was another wicked hosted by Charlotte. She made a set of fantastic Lemon Muffins!

Ingredients:
- 1 ¾ cups (250g) all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ? cup (135g) granulated sugar
- 2 large eggs
- ¾ cup yogurt
- 6 tablespoons (85g) butter, melted
- zest and juice of one lemon (mine yielded about 1 tablespoon zest and ¼ cup juice)
- ½ teaspoon vanilla extract (optional)
- 1 cup powdered sugar
- 2-3 tablespoons lemon juice
Recipe:
Preparation
- Preheat oven to 220°C / 425°F
- Butter 12 muffin cups or line with paper liners
Dry Ingredients
- In a large bowl:
- Sift together:
- Flour
- Baking powder
- Baking soda
- Salt
- Mix in:
Wet Ingredients
- In a medium bowl:
- Whisk together:
- Eggs
- Yogurt
- Melted butter
- Lemon juice
- Vanilla extract
- Mix just until combined
Combine
- Pour wet ingredients into dry ingredients
- Stir gently with a wooden spoon or spatula
- Mix just until combined (do not overmix)
- Batter should be thick and lumpy
Bake
- Divide batter evenly into muffin cups (fill almost to the top)
- Bake:
- 3 minutes at 220°C / 425°F
- Then reduce temperature to 180°C / 350°F
- Bake for 12–17 more minutes
- Muffins are done when a toothpick comes out clean
Cool
- Let muffins cool in the pan for 10 minutes
- Transfer to a wire rack to cool completely
For the topping
In a small bowl:
Sift powdered sugar
Add lemon juice gradually
Mix until you get a pourable consistency
Finish
Once muffins are cooled:
Pour drizzle over the top
