Well Wednesday with Charlotte – Chilli Chickpea Pitas

This week, Charlotte showed us another way to use the humble chickpea – as a healthy filler for pita bread bites. Packed with goodness and a little spice, they make a great energy-boosting snack for a winter afternoon in the office, or as a great accompaniment to salad and other light bites.

Ingredients

(serves 8)

1 tin chickpeas, rinsed and drained

Splash of Olive Oil

Squeeze of Lemon

1tbsp Chilli flakes

2 tsp Mixed Herbs

Salt and Pepper to taste

Method

  1. Mix all ingredients together in a large bowl, ensuring the spices and oil are evenly mixed among the chickpeas
  2. Serve with warm pita bread and your favourite dips
